Family Time in Mobile Alabama

When I was growing up one of our favorite things to do was go stay with my Grams and PawPaw.  We knew when we woke up there would be homemade biscuits and gravy ready for us.  They have good frozen biscuits these day but nothing compares to homemade buttermilk biscuits. Grams always made them with self rising flour (Lilly White) buttermilk and oil but I found a recipe I like even better (I’ll share later on), though her way is easier.  As for gravy it has stayed them same.  She always used Zeigler sausage, butter, flour and whole milk.

It’s Labor Day and Daddy is home so we have had a slow morning so we made biscuits and gravy. It’s still my favorite and my children love it now too! I love that they love to cook with us and it’s so much fun just to be together with nothing else on the to do list.

Biscuits:

2 Cups of all purpose flour (I use King Arthur)

2 TBLS Sugar

Pinch of Salt

2 Tsp Baking Powder

1/2 Tsp Baking Soda

1 Stick of Butter

1 Cup of Buttermilk

Mix dry ingredients and whisk together. Cut butter in small squares.  Cut in butter with pastry cutter, add buttermilk and form a ball (don’t over mix). Roll out onto a lightly floured surface. Knead 5 to 6 times. Roll 1/2 inch thick use biscuit cutter to cut out biscuits 2 1/2 inches. Place on cookie sheet or stone sides touching. Bake 400 for 20 minutes.

Gravy:

Brown sausage, add stick of butter. When it melts add some flour (this part is a preference so if you want thin gravy just dust a little if you want thick add more). Practice will let you know how you like it and how much to add.  Then add milk, again it will be a preference, you can also add half and half or cream if you like though it will add calories. You know those things that sew your clothes together while you sleep!
